My straw bale garden is still churning out tomatoes in mid-October!  Everyone has had their fill and I have been having trouble figuring out how to incorporate more tomatoes into our meals.  Today, I decided the only solution was a big batch of salsa.  Here’s the recipe.

Approximately 3-4 cups of chopped tomatoes

1 bell pepper (also from my straw bale garden)

1 green onion (found this straggler in the garden too)

1 white onion

1 tsp salt

1 tsp garlic powder

1 tbsp Real Lime

Chopp all the veggies.  Add the salt, garlic powder and lime powder.  Mix well and taste.  Adjust seasoning to taste.

This was a very easy recipe and it tastes great!
