Apple Cake

I have been going through my mother’s recipes looking for my favorites, her specialties and other interesting dishes.  This one caught my attention because I happened to have a surplus of apples after a trip to a nearby apple orchard last weekend.

2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 eggs
1 1/2 cups sugar
1/3 cup vegetable oil
1 cup unsweetened applesauce
2 teaspoons vanilla
5 cups peeled and chopped apples
1/2 cup finely chopped pecans, toasted
Vegetable cooking spray

Preheat oven to 350°.  Sift together the flour, baking soda, salt and cinnamon.  In a separate bowl, use a wire whisk to beat eggs and sugar until creamy.  (I didn’t have applesauce, but had an abundance of apples, so I made applesauce in the blender–just chopped apples + about 1/2 cup apple juice). Add oil, applesauce and vanilla to the sugar/egg mix and beat until smooth.  Add dry ingredients to mix until a stiff dough forms.  Stir in apples and pecans.  Pour into baking pan coated with cooking spray and lightly dusted with flour.  For a 9 x 13 pan bake 30-35 minutes.  For a 10 inch tube pan bake 1 hour and 10 minutes. (20 servings @ 215 calories)
