Here’s the recipe for a zucchini bread that also works with summer squash. It is hard to get the exact amount of shredded squash that a recipe calls for due to the variable size of squashes. 3 smallish squashes yielded approximately 4 cups. The recipe called for 3 cups, but I used it all. Because of the extra squash and added cup of nuts, I ended up with 3 loaves instead of 2.
Healthy? Well, it’s got those extra veggies and nuts, so that’s kind of healthy. And, I did select a recipe with less sugar than many others. Realistically though, it is a sweet bread. Moderation is the key. If you are like me and find moderation hard to follow, make 3 loaves and give away 2.
