I have 9 summer squashes in my refrigerator (picked 5 today). My challenge is to use them in recipes that my husband will actually eat. Tonight, I found a recipe for zucchini fries that sounded appetizing. Besides substituting summer squash for zucchini, I used salt, pepper and Mrs Dash for seasoning.
There are lots of similar recipes for this. Mine is very simple.
Cut the squash into strips (about the size of thick French Fries). Dip the squash strips in egg (or egg beaters), then dredge in bread crumbs. Arrange the strips on a lightly oiled baking sheet (or line the baking sheet with parchment paper). Bake at 425° for 20 minutes, turning the strips after 10 minutes. Serve hot.
