Cold night. I need something easy, healthy and hearty and I don’t want to have to go to the store for ingredients. With ingredients on hand, I put together this hearty and healthy chicken pot pie.
3 chicken breast tenderloins
1/2 zucchini, sliced
1 small can peas
1 small can mixed vegetables
1 can “healthy selections” mushroom soup
3/4 cup complete pancake mix
3/4 cup water
Brown the chicken & zuccini slices in skillet with just enough olive oil to prevent sticking. Cut the chicken into small chunks and add the chicken and canned ingredients to a 2 quart casserole dish. Feel free to substitute fresh or frozen vegetables for the canned ones. These are just what I had on hand. (Mushrooms, chopped tomatoes, green beens, asparagus, okra, whatever your favorite or in season vegetables work well.)
In a separate bowl, mix 3/4 cup complete pancake mix with 3/4 cup water (it will be soupy). Pour this over the top of the casserole. Bake at 400° for 30 minutes. Makes 4 servings (about 300 calories each).
