A Healthy Chicken Taco Salad

 

When you need your Mexican Food fix, but don’t want to splurge on the calories, slim down your recipe. I substitute a low calorie shell for the unhealthy fried version. I use Flat Out Flatbreads Lite and bake them in the special taco bowl form to make a cute edible bowl. Instead of ground beef, I use chicken tenders (2 per serving). For extra flavor, I cook the tenders with some onions and bell peppers. My salad consisted of shredded lettuce, chopped tomatoes, chopped green onions, a dollop of low-fat sour cream and a sprinkle of non-fat cheddar cheese.  The calorie count for this salad comes in at less than 400 calories (and you get to eat the bowl).
