Fruit Cobbler

What a lovely Fall-ish day! I decided to make a quick fruit cobbler to finish out our dinner.  I had a greenish apple sitting on the counter and berries in the freezer.  I didn’t measure anything, but it went something like this:

 

 

1 apple sliced
1 1/2 cups blueberries
2 Tablespoons butter
1 cup oatmeal
1/3 cup brown sugar
1 teaspoon cinnamon

I roughly mixed all the ingredients together and put them in the middle of a square of foil (the foil was double thickness), turning up the edges to make a pouch. I used another small piece of foil as a lid for the pouch. I put the foil pouch on the barbecue grill over hot coals. I periodically stirred the cobbler checking for doneness and consistency. When I took the meat I was grilling off, I gave the cobbler a stir and closed the lid of the grill, leaving the vents open. By the time we had eaten our meal, the cobbler was done. (2 servings)

  1. Vickie, you’re a woman after my own heart. On the first visit to your blog, the 3 most recent posts involve cobbler and one prepared on the grill. Oh yeah!! I grew up eating blackberry cobbler – summer berries picked by me and my sisters (along with the chiggers), and lovingly prepared by my Mom. There’s nothing better. ~James
