Another night of waiting until the last minute to decide what to cook for dinner. The criteria, as usual, is what is on hand and can be put together quickly. This recipe takes about 20 minutes start to finish.

What I came up with was quick and delicious and worked with frozen shrimp.

1 small onion coarsely chopped
1 yellow bell pepper coarsely chopped
2 Tbs olive oil
2/3 lb of individually frozen shrimp
2 cups cooked rice
1/2 jar prepared spaghetti sauce (1 used Prego with mushrooms)
Salt, pepper, Mrs Dash & Chili powder to taste.

Cook the onion and peppers in medium hot skillet to soften them. Add shrimp. Salt & pepper to taste. Add 1/2 jar of spaghetti sauce. Reduce heat to simmer. Add rice. Sprinkle Mrs Dash (I used about 1 tsp) and chili powder (about 2 tsp) into mixture. Stir. Cover and simmer for about 5 minutes. Stir & check doneness of shrimp. Cook until shrimp are cooked through (about 5 more minutes). Makes 2-4 servings depending on side dishes.
